Dalia Usili

Ingredients
1 cup broken wheat (dalia)
1/2 cup moong dal (split green gram)
1/2 cup chana dal (split bengal gram)
2 to 3 whole dry kashmiri red chillies
a pinch of turmeric powder (haldi)
1/4 cup grated carrot
1/4 cup grated cucumber
1/4 cup finely chopped onions
1/4 cup freshly grated coconut (optional)
a few curry leaves (kadi patta)
few coriander (dhania) leaves
1 tsp mustard seeds ( rai / sarson)
a pinch of asafoetida (hing)
1/2 tbsp lemon juice
salt to taste
2 to 3 tsp oil

Method

1. Combine both the dals together and soak in enough water for 1 hr.
2. Drain and blend in a mixer along with red chillies, turmeric and salt to a coarse paste.
3. Pour the mixture in a thali and steam for 5-10 minutes.
4. Keep aside.
5. Combine the broken wheat with salt and enough water and pressure cook till done. Keep aside.
6. Heat oil in a kadai, add mustard seed, asafoetida and curry leaves.
7. When the seeds crackle, add the cooked dal and saute till the paste becomes powdery.
8. Add the cooked dalia and saute for 5 minutes.
9. Remove from flame, add the lemon juice, grated carrot, cucumber, coconut and onion and mix will.
10. Garnish with coriander leaves and serve.

Potato And Apple Salad

Ingredients

2 potatoes, boiled
1 head lettuce
1 small cucumber
2 apples
3/4 cup cooked corn (optional)
3/4 cup shredded red cabbage (optional)

few sliced spring onions
French Dressing

How to proceed

1. Place the cubed potatoes, cucumber, apples and corn in a bowl.
2. Add lettuce leaves and red cabbage
3. Keep in the fridge to chill.
4. Just before serving, pour the dressing on top and decorate with spring onion rings.

CARROT CAKE

INGREDIENTS
Carrots, coarsely grated 2 cups
Eggs 3
Sugar 1/2 cup
Whole wheat flour (atta) 3/4 cup
Cinnamon powder 1/2 teaspoon
Salt 1/4 teaspoon
Baking powder 1/4 teaspoon
Soda bicarbonate 1/2 teaspoon
Oil 2 tablespoons

METHOD
Preheat the oven to 180°C / 350°F. Break the eggs into a bowl, add sugar and beat with a hand blender till light and frothy. Sift whole wheat flour, cinnamon powder, salt, baking powder and baking soda into the bowl and mix. Add carrots and mix. Add oil and mix. Pour the batter into a heart shaped silicone mould. Bake in the preheated oven for about forty to forty five minutes. Take the mould out of the oven and set aside to cool. Demould when cooled, cut into slices and serv

Bajra Methi Khakhras

Ingredients
1/2 cup bajra (black millet) flour
1/3 cup ragi (nachni / red millet) flour
2 tbsp whole wheat flour (gehun ka atta)
1/2 tsp ginger-garlic (adrak-lehsun) paste
1/4 tsp finely chopped green chillies
3 tbsp finely chopped fenugreek (methi) leaves
1/4 tsp turmeric powder (haldi)
1 tsp oil
salt to taste

Other Ingredients
2 1/2 tsp ghee for cooking

Method

1. Combine all the ingredients and knead to make a soft dough using enough water.
2. Divide the dough into 5 equal portions and roll out each portion into a 125 mm. (5″) diameter thin circle.
3. Cook 1 circle on a tava (griddle) on both sides using a little ghee until light pink spots appear.
4. With the help of a folded muslin cloth, press the khakhra from all the sides and cook over a slow flame till it is crisp.
5. Repeat with remaining circles to make 4 more khakhras.
6. Cool completely and serve.

Paushtic Parathas

Ingredients

1 1/2 cups whole wheat flour (gehun ka atta)
1/4 cup besan (Bengal gram flour)
3/4 cup peeled, boiled and grated potatoes
1 cup chopped spinach (palak)
1/4 cup grated carrot
2 tsp finely chopped green chillies
4 tbsp curd
2 tsp oil
salt to taste

Other ingredients
whole wheat flour (gehun ka atta) for rolling
1 tsp oil for cooking

Method

1. Mix all the ingredients and make a soft and smooth dough.
2. Divide the dough into 8 equal portions and roll out each portion into triangles with the help of a little whole wheat flour.
3. Cook on a non-stick tava (griddle) using a little oil on both sides till they turn golden brown.
4. Serve hot.
