Paushtic Parathas

Ingredients

1 1/2 cups whole wheat flour (gehun ka atta)
1/4 cup besan (Bengal gram flour)
3/4 cup peeled, boiled and grated potatoes
1 cup chopped spinach (palak)
1/4 cup grated carrot
2 tsp finely chopped green chillies
4 tbsp curd
2 tsp oil
salt to taste

Other ingredients
whole wheat flour (gehun ka atta) for rolling
1 tsp oil for cooking

Method

1. Mix all the ingredients and make a soft and smooth dough.
2. Divide the dough into 8 equal portions and roll out each portion into triangles with the help of a little whole wheat flour.
3. Cook on a non-stick tava (griddle) using a little oil on both sides till they turn golden brown.
4. Serve hot.

Dal Paratha

Ingredients:

1. 1 cup channa daal.
2. 1/4 tsp turmeric.
3. 1 tsp cumin seeds.
4. 2 tsp coriander powder.
5. 1 tsp red chilli powder (optional).
6. Salt to taste.

The Dough:

I kneaded the dough in curd. If you don’t want to use curd then use milk or water. Curd/milk gives a white texture to the dough and the taste of the dough becomes almost like a white flour (maida).

The dough should neither be very soft nor be very stiff. Always remember that the chapathi dough is the softest, puri dough is the stiffest and the paratha dough is in between.

For 1 cup wheat flour, mix 2 tsp ajwain seeds (carom seeds). They impart the kachori flavor to this paratha.

Procedure.

1. Pressure cook 1 cup channa dal in 1 and a half cup water. Do add in little salt.
Cook for 3 -4 whistles.

When dal is done we do not require excess water. So if water is there then just cook the dal without the lid and evaporate all the water. You can also strain the water and keep it aside. You can use this water to make chapathi dough but don’t use it to make dough for this particular paratha.

2. In a pan, take 1 tsp oil and add cumin seeds. When they splutter add the dal mixture. Add turmeric, coriander power, red chili powder and salt. Mix well. You need to cook the mixture till it becomes completely dry and forms a dry dough. Also mash the dal so that any whole grain is not left. While stiring keep pressing and mashing it to make it smooth.

It cooks very fast, so all is done within 5 minutes. You need to keep moving the spoon else the mixture will stick. Use a non stick pan for this.If you feel like adding any other spices to this, feel free to do so. Let the mixture cool down completely.

3. Now roll the dough, put a heap of the mixture. The mixture should be more. Make a ball and then roll out the paratha.

4. Grill the paratha. Once it is grilled. Add ghee on both sides and cook well. Don’t make the mistake of avoiding ghee. If you use 1/2 tsp of ghee per paratha its good enough. I never gave up on ghee and there no need for you to do so. If you don’t like ghee you can use oil. One trick for oil/ghee is to dip the spoon and let the oil fall back in the container, now use the back of the spoon on the paratha. This way less oil/ghee is used to make the paratha.
5. Serve hot with curd.

They can be put in the fridge as everything in these paratha is cooked well. They taste good even when they are cold and they freeze beautifully. What else one need for a meal.

Oats Upma

Ingredients

* One cup of oats (200 gms)
* One onion (finely chopped)
* One tomato (finely chopped)
* 1/4 cup of mixed vegetables (peas, carrot, beans, capsicum and cabbage)
* 1/2 tsp mustard
* 1/2 tsp urad dal
* 1/2 tsp channa dal
* 1 or 2 red chillies
* Few curry leaves
* 1/2 tsp asafoetida
* 2 tsp cooking oil
* Salt as required

Method

1. In a kadai, boil beans, carrot, cabbage and capsicum with enough salt and water.
2. Fry oats for 2 minutes and keep it aside.
3. In a frying pan, put 2 tsp oil.
4. Add mustard, urad dal, channa dal and red chillies and fry till the dals turn brown.
5. Add chopped onion, curry leaves and asafoetida and fry till the onion becomes soft.
6. Add chopped tomato and fry till it gets cooked.
7. Add one and quarter cup of water and enough salt.
8. When water starts boiling, add the cooked vegetables and fried oats and stir well.
9. Lower the heat and cover the pan with a lid allowing it to get completely cooked and all the water is dried.
10. Garnish with coriander leaves and serve hot along with coconut, coriander chutney.

DOODHI MUTHIA

Cooking Time : 30 min.
Preparation Time : 10 to 15 min.

Serves 4 to 6.

Ingredients

For the muthias
2 cups white pumkin (lauki), grated
1 onion, grated (optional)
1 cup whole wheat flour (gehun ka atta)
3/4 cup semolina (rawa)
1/2 cup Bengal gram flour (besan)
2 tablespoons green chilli-ginger paste
1/2 teaspoon turmeric powder (haldi)
1/2 teaspoon garam masala
1/2 teaspoon cumin seeds (jeera)
1/2 teaspoon fennel seeds (saunf)
juice of 1 1/2 lemons
2 tablespoons sugar
2 tablespoons chopped coriander
4 tablespoons oil
1/2 teaspoon soda-bi-carb
1/2 teaspoon asafoetida (hing)
salt to taste
For the tempering
2 teaspoons mustard seeds
1 tablespoon sesame seeds (til)
1/2 teaspoon asafoetida (hing)
4 tablespoons oil
For the garnish
2 tablespoons chopped coriander
2 tablespoons grated coconut

Method

1.     For the muthias
2.     Strain the water out of the grated pumpkin and onion, keeping liquid aside to use if required to knead the dough.
3.     Combine all the ingredients for the muthia in a bowl and form a soft dough adding the strained vegetable liquid if required.
4.     Using oiled palms, divide the mixture into 3 parts and roll out into cylindrical shapes 200 mm. (8″) long.
5.     Steam for 25 to 30 minutes till done.
6.     Cool and slice into 20 mm. (3/4 “) long pieces and keep aside.
How to proceed
1.     Heat the oil and add the mustard seeds. When they crackle, add the sesame seeds and asafoetida.
2.     Add the sliced muthia and stir for 5 to 10 minutes till they are light brown in colour.
3.     Garnish with coriander and coconut.
4.     Serve hot with green chutney.

Instant Gujarati Handvo

Ingredients:

  • 2 cup Rava or farina cereal
  • 3/4 cup gram flour,
  • 1/4 cup vegetable oil,
  • 1 cup yogurt
  • 3/4 cup vegeables like opo squash,carrots and green peas,
  • salt to taste
  • turmeric powder,
  • red chilli powder,
  • garlic, green chillies, ginger, seasame seeds,
  • asafoetida a pinch
  • 1 teaspoon eno muastard seeds.

Preparation:

* Mix rava and gram flour and yogurt.
* Grate opo squash, carrots. Add them to the mixture with green peas.
* Add other ingredients.
* Also add some water to make the batter medium consistency.
* Heat oil and add mustard seeds.
* Mix eno in the batter stirring vigorously.
* Pour oil over the batter.
* Add seasame seeds over the batter and cook in oven at 400
